Calypso Club bursts onto Cairns scene

CALYPSO Club, the newest addition to the Cairns waterfront dining precinct, has opened to the public following a VIP launch on Wednesday 18 October.

Invited guests enjoyed cocktails and canapés from the tropics-inspired menu, including ceviche, mud crab and snapper croquettes, smoked rainbow trout tostadas, and prawn and chorizo skewers.

Cocktails available ranged from colourful shaved ice concoctions to true island-style sweet drinks served in coconuts, all inspired by Queensland’s sugarcane history and befitting a tropical rum bar.

A fresh evening breeze drifted in from the Esplanade as Calypso Club staff treated guests to freshly shucked oysters and live jazz filled the air.

Guests could also visit the vintage postcard station, where a calligrapher would write and address Calypso Club postcards to later be sent to loved ones.

Crystalbrook Riley general manager Melissa Shaw said the soft-launch event was a rousing success and gave guests a taste of the summer holiday feel the bar will bring year-round.

“On Wednesday night we were thrilled to welcome more than 80 guests to be the first to experience Calypso Club,” she said.

“Guests were treated to rum cocktails, Calypso canapés and interactive stations, such as oyster shucking, a live jazz player and a calligrapher personalising postcards to send loved ones.

“Now open to the public, Calypso Club is the ultimate meeting place for lunch or dinner and we look forward to giving everyone the Calypso Club VIP experience.”

Calypso Club opened officially on Thursday 19 October.
